(Updated) Guide to Installing Jekyll on Windows

Hi all!

Like most of us, I’m learning Jekyll as I go. One of my biggest adventures was figuring out how to install it locally on my Windows PC. I found a few guides (some better/clearer than the official docs, some worse), but I decided to write up my own experiences as a blog post / guide for anyone else who might benefit.
